Do you dream of being a Chef? If you love cooking, discovering new ingredients, learning classic recipes and techniques, exploring new cuisines, and preparing sensational dishes, then you’ll love the  ICAE Commercial Cookery courses! Learning from our internationally trained chefs in our state-of-the-art training kitchen, you’ll receive personalised instruction on campus for half the first half of your course, then put your skills into action on Industry Placement for the second half of your course.

Duration: 52 weeks (two semesters)

Semester 1: On-campus Tuition Semester

On-campus classes: 21 hours per week
Paid work rights: up to 40 hours per fortnight (14 days)

Semester 2: Industry Placement Semester
20 Weeks
No on-campus classes during Industry Placement
Paid work rights: up to 45 hours per week

This Certificate III in Commercial Cookery qualification reflects the role of commercial cooks who use a wide range of well-developed cookery skills and sound knowledge of kitchen operations to prepare food and menu items. Using discretion and judgement, they work with some independence and under limited supervision using plans, policies and procedures to guide work activities.

How you study

Our Certificate III in Commercial Cookery course is based on our proven industry-focused program, maximising your time actually working in industry. This concentrated time working in industry provides you with real experience, real exposure to industry, and a real work résumé on completion of the course. ​

First semester is spent undertaking practical and theory tuition on campus in our new purpose-built training kitchen facility, where you develop the skills and knowledge to help you obtain your Industry Placement job.​

Second semester is entirely in the workplace undertaking Industry Placement (IP). IP is where you continue to develop your skills, demonstrate your competence to us and your IP employer, and build the critical foundation for a career in the hospitality industry. If you are offered employment for your IP, you will receive a minimum of AUD$17 per hour, and you can work for up to 45 hours per week.

    ● 20 core units
    ● 5 elective units, consisting of:
        ○ 3 units from Group A or Group B below
        ○ 2 units from Group A, Group B or Group C
