This Certificate IV in Commercial Cookery qualification reflects the role of commercial cooks who have a supervisory or team leading role in the kitchen. They operate independently or with limited guidance from others and use discretion to solve non-routine problems.

How you study

Students undertaking this Certificate IV in Commercial Cookery course receive tuition at ICAE’s Rapid Creek campus, and participate in practical assessments at their workplace. This ensures that apprentices actually demonstrate their workplace competence in a real working environment – the ultimate confirmation of work readiness. Supervising chefs can ensure that their apprentices are ready to demonstrate their skills, and apprentices can prepare and perform in their own kitchen in an environment they are familiar with.

Attending college on a regular basis ensures that you receive personal support to help you keep up with the required theory, and keeps you on track to achieve your qualification. ICAE teachers help you prepare for all your assessment tasks, and if you require additional support you can always contact your teachers for assistance.

Course structure

All students enrolled in the Certificate IV in Commercial Cookery qualification must undertake all the Core Units, plus seven electives as directed by ICAE (see Unit List).
